Turkey Meatball Surprise!

BROCCOLI. I saw @daphneoz make these on @rachaelrayshow but since i can’t be bothered to follow recipes, I just chopped a head of broccoli and added it to my typical meatball recipe.
SO…. look it up with them OR…
Make your favorite meatball recipe and add in finely chopped or riced broccoli.
Orrrrr roughly follow mine-
🥦 I don’t measure but my meatballs include:
✅Ground turkey – 3lbs
✅Some bread crumbs – maybe 1/2 cup?
✅Parmasan cheese – 1/2 cup and then some if you’re like me and love it
✅2 eggs (because it’s 3 lbs meat)
✅Finely chopped large head of broccoli
✅Grated some onion
✅Salt, pepper, garlic powder
✅Drizzle of oil.
Mix and Scoop onto sprayed pan.
Bake at 350* (these took 20-25 minute because of small scoop)

I pop these as a snack or with a meal, topped with some shredded Parm or my fave, oven roasted tomatoes (olive, salt and pepper, roast at 400* til they burst, then smash and sprinkle with some balsamic vinegar!) You can even serve with spaghetti squash for a light comfort food meal.
And if you’re #pregnant and can’t stand to eat veggies, this is a great way to sneak some in!
