I hope you are lucky enough to spend this Mother’s Day with a very special mom, whether she’s your mom or not. I hate when holidays become stressful because of fearing food or having too much to do to host a meal. So for my blog this week, I just want to share one of my favorite recipes with you. It’s simple and delicious. My entire family loves this and it’s always a hit at social gatherings. It couldn’t be more simple and stress free, plus nutritious!

I used to make my own poppyseed dressing, but once I found Marie’s poppyseed with minimal ingredients and non-gmo, I often just buy it. Plus, with all the goodness in the salad, minimal dressing is even needed!


☀So here it is. My crispy, cold, crunchy, crispy, chewy, sweet and salty salad!



2 bags or 3 heads of fresh romaine lettuce, chopped

2 apples, I used organic gala, diced

2 Bosc pears, diced

Salted cashews, couple handfuls

1 bag craisins, 5-6oz

1 bag shredded cheese, I used Italian blend

Toss together and top with dressing



This makes a LARGE salad, even for my salad loving family!! But, it is still good leftover for a day or two.  I leave the dressing off so you can save it in an airtight container in the fridge.


☀Side note: you can make this as an individual salad with topping your own romaine with smaller amounts of everything, obviously! It’s cold, hits the sweet tooth, and has lots of fiber for you! Enjoy!😊
